Happy New Year, friends! Wanted to quickly share w Happy New Year, friends! Wanted to quickly share with you the chocolatey New York style cheesecake I made on NYE. No fancy video, but it’s a killer recipe! 

Chocolatey New York Cheesecake 

For the crust: 
- 150 g digestive biscuits
- 50 g almonds
- 2-3 tbsp cocoa powder 
- 70 g melted butter (salted or unsalted- both fine)

For the filling:
- 480 g cream cheese at room temp 
- 160 g sugar (I used Demerara)
- 160 mL sour cream (2/3 cup)
- 3 large eggs
- 1/4 tsp almond extract (or 1 tsp vanilla extract)
- 3 tbsp cornstarch (or flour)

For the topping: 
- 300 mL sour cream (I used a combo of sour cream and Greek yogurt)
- 150 g dark chocolate (I used 50% cacao solids)
- white chocolate shavings (to decorate)

Instructions:
1. Preheat the oven to 180 C/350 F.
2. Blitz the dry ingredients for the crust together, then add the butter and continue to mix till you’re left with something resembling the texture of wet sand.
3. Dump into a 20 cm (8 inch) springform pan, pressing it to form the base, and slightly up the sides. Place in the fridge while preparing the filling.
4. To make the filling, combine all the ingredients together, and mix till smooth. 
5. Pour into the base, give the tin a few taps to release air bubbles. Place in the middle rack of the oven.
6. Place a oven-proof dish in the oven too, underneath the cheesecake and fill it with water. This helps keep the cheesecake from cracking.
7. Bake 45-50 min or until the edges have puffed and the centre is still a tad jiggly.
8. Turn off the oven, open the oven door slightly and let the cheesecake cool in the oven for about an hour. This also helps prevent cracks.
9. Remove the cheesecake from the oven, let the it come to room temp. Then place in the fridge to cool completely.
10. To prepare the topping, melt the chocolate over low heat or over a double boiler, then add the sour cream/yogurt, mixing till combined.
11. Spread onto the cheesecake, pop the cheesecake back into the fridge for an hour, then decorate with white chocolate shavings before serving.
These is best the next day when it’s nice and cold.
