Preheat the oven to 180 C (350 F).
Chop the onions and mince the garlic. Sautee in a bit of olive oil until translucent.
Add in the spinach and cook till wilted. Set aside to cool slightly.
In a medium sized bowl, combine the ricotta cheese and egg. Whisk till smooth.
Add in the feta and seasoning, and stir to combine.
Add in the spinach and onion mixture and blend.
Line a 9-inch pie plate with puff pastry- cover the bottom and sides entirely.
Spread the spinach-cheese mixture atop the prepared pie plate, and fold over the edges of the puff.
Bake for around 30 minutes or until the edges of the puff are golden brown and the center is set.
Cool slightly, and enjoy!
