Spinach, ricotta and feta pie

This vegetarian pie recipe is easy, delicious and healthy!

Ingredients

  • 1 medium sized onion
  • 2 cloves garlic
  • 150-200 g fresh baby spinach
  • 200 g ricotta cheese
  • 150 g feta cheese
  • 1 egg
  • ½ tsp nutmeg
  • ½ tsp chilli flakes
  • 1 tsp salt
  • Puff pastry dough- enough for a 9 inch pie

Instructions

  • Preheat the oven to 180 C (350 F).
  • Chop the onions and mince the garlic. Sautee in a bit of olive oil until translucent.
  • Add in the spinach and cook till wilted. Set aside to cool slightly.
  • In a medium sized bowl, combine the ricotta cheese and egg. Whisk till smooth.
  • Add in the feta and seasoning, and stir to combine.
  • Add in the spinach and onion mixture and blend.
  • Line a 9-inch pie plate with puff pastry- cover the bottom and sides entirely.
  • Spread the spinach-cheese mixture atop the prepared pie plate, and fold over the edges of the puff.
  • Bake for around 30 minutes or until the edges of the puff are golden brown and the center is set.
  • Cool slightly, and enjoy!
