Thick, Fluffy Oatmeal Pancakes

Thick, fluffy whole wheat pancakes flavored with oats and cinnamon. An all-in-one breakfast that couldn’t get better.

Ingredients

  • ½ cup whole wheat flour
  • ½ tsp cinnamon
  • 1 tsp baking powder
  • pinch salt
  • 1 tbsp brown sugar
  • cup instant oats
  • 1 egg
  • cup milk it doesn’t make much of a difference- I use 2%
  • 2 tbsp yogurt
  • ½ tsp vanilla extract
  • ¼ cup dark chocolate chunks optional

Instructions

  • In a bowl, mix the oats, flour, cinnamon, baking powder, salt and brown sugar till incorporated.
  • Add the egg, milk, yogurt and vanilla and blend just to combine.
  • Fold in the chocolate (if using).
  • Grease a saucepan or griddle with vegetable oil and spoon mounds of batter, spread apart evenly. Spread slightly to create an even circle.
  • Cook for 2-3 minutes on each side or until golden brown and serve piled on top of each other with some fresh fruit, maple syrup and/or butter.
