Thick, Fluffy Oatmeal Pancakes

Thick, fluffy whole wheat pancakes flavored with oats and cinnamon. An all-in-one breakfast that couldn’t get better.

- ½ cup whole wheat flour
- ½ tsp cinnamon
- 1 tsp baking powder
- pinch salt
- 1 tbsp brown sugar
- ⅓ cup instant oats
- 1 egg
- ⅔ cup milk it doesn’t make much of a difference- I use 2%
- 2 tbsp yogurt
- ½ tsp vanilla extract
- ¼ cup dark chocolate chunks optional
In a bowl, mix the oats, flour, cinnamon, baking powder, salt and brown sugar till incorporated.
Add the egg, milk, yogurt and vanilla and blend just to combine.
Fold in the chocolate (if using).
Grease a saucepan or griddle with vegetable oil and spoon mounds of batter, spread apart evenly. Spread slightly to create an even circle.
Cook for 2-3 minutes on each side or until golden brown and serve piled on top of each other with some fresh fruit, maple syrup and/or butter.
