Ingredients

  • 2 cups granulated sugar
  • ¼ cup cocoa powder
  • ½ cup unsalted or salted butter- either works or margarine
  • ½ cup milk skim, whole, evaporated- either works as long as it's not sweet
  • pinch salt if the butter is unsalted
  • 3 cups quick cooking oats
  • ⅓ - ½ cup desiccated coconut
  • ½ cup crunchy peanut butter
  • 1 tsp vanilla extract PLEASE make sure that you're using vanilla extract not essence, essence is a lot more powerful in taste so you'll have to reduce the amount you add!

Instructions

  • In a saucepan, combine the sugar, cocoa, butter and milk.
  • Bring these ingredients to a boil on medium heat, boil for 2 minutes, then turn off the heat.
  • Stir in the oats coconut, peanut butter, salt and vanilla.
  • Spoon 2 tbsp sized mounts of the mixture onto a parchment paper lined/ greased tray and flatten into the shape of a cookie. Work quickly as the mixture sets- just like fudge.
  • Cool for about 10 minutes, drizzle with melted chocolate and sprinkle atop some crushed peanuts and desiccated coconut for a fancier finish.
