½cupunsalted or salted butter- either worksor margarine
½cupmilkskim, whole, evaporated- either works as long as it's not sweet
pinchsaltif the butter is unsalted
3cupsquick cooking oats
⅓ - ½cupdesiccated coconut
½cupcrunchy peanut butter
1tspvanilla extractPLEASE make sure that you're using vanilla extract not essence, essence is a lot more powerful in taste so you'll have to reduce the amount you add!
Instructions
In a saucepan, combine the sugar, cocoa, butter and milk.
Bring these ingredients to a boil on medium heat, boil for 2 minutes, then turn off the heat.
Stir in the oats coconut, peanut butter, salt and vanilla.
Spoon 2 tbsp sized mounts of the mixture onto a parchment paper lined/ greased tray and flatten into the shape of a cookie. Work quickly as the mixture sets- just like fudge.
Cool for about 10 minutes, drizzle with melted chocolate and sprinkle atop some crushed peanuts and desiccated coconut for a fancier finish.
